Special K Cookies

Continuing the mother's day theme...This is the recipe we use from my Mom's Mom, Grandma Vernice Allen, the most.
Special K Cookies
1 cup karo syrup
1 cup sugar
1 cup peanut butter
6 cups Special K cereal

1. Bring karo syrup and sugar to a boil until sugar is dissolved.
2. Remove from heat and mix in peanut butter.
3. Pour over cereal and mix well.
4. Spoon cereal into cookies on wax paper and cool.
This is obviously extremely similar to Scotcharoos. I enjoy this recipe because they are cookies, so less messy, and sometimes the chocolate/butterscotch top is overwhelming.

Mom's Lasagne

With Mother's Day coming up I am going to share the recipe I got from my mom and use the most. Her delicious (and deliciously easy) Lasagna.

The basic is:

Layer in 9x13 pan in this order:
-Prego Fresh Mushroom Sauce (only the best!)
-uncooked Lasagna noodles
-Ricotta cheese mix (1 lg container Ricotta cheese, 1/4 cup Parmesan, 1 egg mixed together)
-Shredded Mozzarella Cheese

Layers approx 4 times, ending with Shredded cheese on top. Pour 1/2 cup hot water over top. Bake covered in foil at 350 for 1 hour, until noddles soft and cheese melted.

Variations include mixing meat of choice in with sauce, or chopped spinach layered with Ricotta mix.

Seriously simple, yay for lasagna with no cooked noodle layering!

Pound Cake with Strawberries

At work the other day one of the nurses brought in some AMAZING! pound cake from Costco. I am not usual a pound cake lover but this stuff was SO dang good. We just topped it with some cutup strawberries. voila simple and delicious.

So if you feel adventurous to make your own...here is a recipe I have heard is pretty good.
As for me I will be sticking to ye olde Costco brand. :)

Sour Cream Pound Cake

3 cups granulated sugar
1 cup butter
6 eggs, separated
2 tsp vanilla
1 cup sour cream
3 cups flour
1/4 tsp baking soda
1/4 tsp salt

Cream together sugar and butter, add the egg yolks one at time; beat well after each addition. Blend in vanilla and sour cream. Into a separate bowl, sift sifted flour, salt, and soda. Add sifted dry ingredients to batter; beat well. In a separate bowl, beat the egg whites until stiff peaks form. Fold egg whites into the cake batter. Pour into a greased and floured tube pan and bake at 300° for about 1 1/2 hours or until cake tests done.

Fa-jitas.

Love me some good Fajitas.

Here is a WAY easy way to make it.

Fajitas
1 lb. boneless skinless chicken breasts, cut into thin strips or browned Steak strips.
2 Tbsp. oil
1 pkg. Fajita seasoning
1/3 cup water
1 green pepper, cut into strips
1 onion, sliced

Cook and stir chicken or steak in hot oil in large nonstick skillet on medium-high heat 5 (more for steak depending on how well done you like it) minutes. Add Seasoning Mix, water, green pepper and onion; mix well. Reduce heat and cook and stir 5 minutes or until meat is cooked through and vegetables are crisp-tender. Place Tortillas on microwavable plate; cover lightly with plastic wrap. Microwave on High for a minute. Spoon fajita mixture evenly onto tortillas; top with Salsa as desired. Roll up.
