I made some "Cafe Rio" sweet pulled pork. Another recipe I found in the "World Wide Ward Cookbook." Super easy and was really really good.
3 lb boneless pork roast
1 cup brown sugar
6 oz coke
8 oz taco sauce
Cook pork roast in crock pot. (I cooked it for 6 hours) Shred pork and add brown sugar, coke, and taco sauce. Crock pot for 1-2 more hours.
This amount fed 6 people and I had a TON of left overs.

Pear Tart
I had 3 pears that were getting to soft to eat so I decided I better find a way to use them. In the "World-wide Ward Cookbook" there is a recipe called, "Penelope's Pear Tart". I didn't follow the recipe exactly because I was missing a couple things, but what I did throw together was pretty delicious.
Here is my version, if you want the real version I encourage you to check out the cookbook, it's awesome!
1 cup flour
1/2 tsp salt
1/3 cup cold butter cut into cubes
6 Tbsp. ice water
Mix flour and salt, cut in butter until crumbly. Add ice water 1 tbsp at a time and knead together dough. Roll out into large circle and press into a pie or tart pan. Bake at 400 degrees for 5 minutes then cool completely.

1 cup sour cream
1 tsp vanilla extract
1 Tbsp lime juice
1/4 tsp lime peel
3 pears sliced up into thin slices.
(I have also used 1Tbsp orange juice and cut out the lime juice/peel and it's great)
Mix flour and sugar well, add sour cream, vanilla, lime juice, and lime peel. Blend all together and spread over cooled crust, saving a small amount. Lay slices of pear over cream mixture. Spread remaining amount over pears. Bake at 350 for 30-40 minutes until crust is brown and cream is bubbling. Cool completely and pour over warm caramel.

Blueberry and Peach Days Cobbler
A yummy start to fall...

1/2 cup brown sugar
3 Tbsp cornstarch

1/2 cup brown sugar

1/4 tsp cinnamon
1/4 cup apple juice or water
5 cups sliced peeled peaches (Approx. 10-12 peaches)
1 cup fresh or frozen blueberries
1/2 cup chopped pecans (optional)
1 Tbsp butter
1 Tbsp lemon juice
1/4 cup apple juice or water

Top with:

A dash of salt

1 egg, beaten

In a saucepan, combine the brown sugar, cornstarch, & cinnamon. Stir in apple juice or water. Bring to a boil & stir for 1-2 minutes until thickened. Add the peaches, blueberries, pecans, butter and lemon juice. Pour into a greased shallow 9x13 pan.

For topping combine the flour, sugar, baking powder and salt. Cut in butter until crumbly. Add milk and egg (will be sticky). Spoon over fruit mixture. Sprinkle with Cinnamon Sugar mix.
Bake at 400 degrees for 25-30 minutes until bubbly and a toothpick inserted in the topping comes out clean. Serve warm. Top with Vanilla Ice cream

I am sorry I haven't posted anything but these challenges. Lots of work chaos in the way I like to call "The Dementor Days". Plus I have also been reading A LOT. Like almost 1,000 pages in the past 2 1/2 weeks. But I digress...this week's challenge was about celebrating summertime.
I have been dying to use the Cosmo Cricket Snorkel set and My friends and I try to visit Bear Lake several times every summer. Unfortunatley I was only able to go once this summer and that lake was rediculously full too. Anyway here we are:

Project Project Challenge Week 2
The Project: Project challenge for week 2 was to use circles (in the episode the designers were making pregnancy clothes).

welcome fall...
it's september 1st...welcome fall. This day marks my most favorite time of year (Sept. 1st to January 1st). This is a darling back to school idea I found on crafty Chicks...Edible Crayons.
